After 2 years. The smoke flavor has subsided, there is a champagne flavor in the bottle, it's mellowed substantially. Intense fruit aroma's with a dry cleaner finish. Good mouth-feel. Vanilla tannins are present.

Updated tasting notes 1-31-2011

Dry like a white wine and crisp with a good alcohol body. Smooth. Lacking a bit in acidity, but great mouthfeel just no fruit flavor. Like a really dry grape wine without the acidity. Mouth-feel fluctuates between dry and water, you can separate the alcohol and flavor components. Probably good to mix next time with perhaps 25% scuppernog? or something with acidity for a bit more crisp flavor to simulate a white wine. Very smooth though at 1.5 years old. Vanilla is the primary thought.
